Fruit or vegetable? The humble Zucchini, or courgette, is a summer squash, comes in various colours. Sources say that it originated in Italy; during the late 1700s. More commonly known as a vegetable, however it has been botanically classified as a fruit. Ranging from a vibrant yellow to a lush green colour. Rich in various Nutrients such as Vitamins A, Magnesium and small amounts of iron, calcium, zinc, and several other B vitamins. Research indicates that the skin of the plants as the highest levels of antioxidants. Yellow zucchinis may contain slightly higher levels than light green ones.

This is a healthy and very quick meal be it for lunch or even dinner. Great also after your workout. The fillings can be off your choice, however the one that i commonly use is delicious. Also great for our beautiful vegetarian friends. I use Free Range liquid egg whites that can be purchased at Waitrose in Dubai/Marina Mall . The recipe as you can see is for one, for two or more just double or treble the quantity. For this dish i served fried fiori di Zucchini which can be purchased through several companies from the internet . (i actually have a supplier in Dubai that sells them to me in small quantities) deep fried in coconut oil.

Serves 1 

Ingredients 

150 g egg whites

50 g Rocket

75 g Zucchini (sliced)

2 tbsp Ricotta cheese

Maldon sea salt & Freshly ground black pepper.

2 tbsp of coconut oil

Method

 Place egg whites into Pyrex bowl.  Slice zucchini length way then into half moon shapes, unless using baby zucchini then just slice. Place into into a non stick saute pan with coconut oil and fry until golden color,  then throw in rocket touch of seasoning, whisk egg whites  and place into saute pan. Gently incorporating all ingredients together. Add your cheese, then  Fold over and cook for a further minute .  Omelette should be soft and fluffy, not over cooked .
